Is the next generation of video cards with DisplayPort 2.1
Will it be possible to convert to HDMI 2.1?

Yes you can connect DP to HDMI. I am sure DP next gen will connect fine with hdmi 2.1, an older spec.

Should be a non issue. As long as the ports and cable support the speed. No problem.
