Is it possible to fix a gas stove burner knob to be less sensitive?

I have a gas stove and all four of the burner knobs are extremely sensitive. It basically switches between the lowest setting and highest setting within 1/8 of a turn of the knob, so its really difficult to get a medium setting on the burner. Is there any way to adjust this?

I'm not sure you can without replacing the valves. That would be a little spendy, and you could end up with what you already have. If it's newish, maybe you can make a warranty claim since it isn't fit for purpose.

edit:
I wasn't gonna mention it cause it's kind of retarded and difficult, but you could make a second set of knobs with a gearing mechanism to turn the main valve. Depending on what your stove looks like, it could be made to look professional.

Based on aesthetics, my stove appears to be from the early 1980s. lol
