It's called "desecrating a corpse" and there are laws against that sort of activity. The only exceptions I can think of are extreme circumstances where you'd starve to death otherwise.

Perhaps companies will give somebody X amount of money if that person agrees to donate his body to their company when he dies. If somebody came up to me and said "I will give you $10,000 right now if you agree to let us package your meat and sell it for people to eat." I would probably do it. The person would have to die of natural causes, and the person can't be really old when he dies either. Also, he can't be diseased...he has to be stabbed or strangled or possibly drowned to death.
