Is having 2 DIMMs still better than 4?

I just upgraded my mobo and CPU to the asus z170 and 4600k processor and added 16 GBs of Ram DDR4. If I could get matching pair later, would it cause stability issues filling up the other channel? Last time I tried this was using DDR3 last year and it caused my system to randomly blue screen with no OC. It seems not only do I need matching pairs with timings and voltages, but even matching batch numbers.
 
If you go to the RAM manufacturer's website and use their "memory finder" tool, they will tell you what will work. For example, on my motherboard some modules work just fine with all four slots filled. However, there are some modules that will only work properly with only two slots.

But yes, it's highly recommended to always use the exact same RAM modules, and not mix them as you already found out by system instability.
 
Z170 is dual channel, so for the most part you'll be better off with 2 high density DIMMs than 4 low density DIMMs.
In X99 however you'd want 4 DIMMs since the chipset supports quad channel memory.
