I don't think an 850W is going to cut it when it comes to overclocked 580's. AX1200?
Sure it does. Rig in sig runs OK with an 850 W PSU and stock GTX 580s in SLI; peak usage is about 720W
Is the Galaxy GTX 570 any good?
Sure. There is the reference version, likely the "GC" (Galaxy Clock) version and soon to be "SuperOverclocked" (SOC). Two year warranty. i have been evaluating Galaxy products for over a year and they are top notch to deal with. They have moved strongly into retail (besides etail) and provide good CS.
