I plan to build a new desktop and I would like to use Asus TUF Gaming X570 Plus (WIFI) motherboard and AMD Ryzen 3700X . I plan to use this RAM; G.Skill DDR4 AEGIS 16GB PC2666 2666MHZ Desktop Ram F4-2666C19S-16GIS and I'm wondering if it's compatible with the motherboard. Have anyone use this RAM on their motherboard? My plan is to use one RAM only (Single channel) when I begin to build the PC (due to budget constraints). After a few weeks, I would add another RAM to make it Dual channel.

Search for the part number (f4-2666C....) in the QVL list posted above. This RAM is not on the tested list. Chances are it will work. However, it is not tested to see if the XMP profile will work. No guarantee that it will actually operate at 2666MHz.

It's usually more cost effective to buy in pairs. There's also a chance that you won't be able to find a matching pair.

Sure, you can use a single DIMM, assuming the RAM works with the motherboard.

I would get RAM in pairs for dual channel, giving better memory performance. Also try to get between 3000 and 3600 MHz for ryzen 3k. That said, what you have selected should work fine with the 3700X, as the 3rd gen ryzen have much improved memory controllers.
