I was enjoying some cheese and crackers and forgot to put the damn cheese back in the fridge. Is it okay to eat?

Yes, while mold does not do anything to you unless you're allergic to the spores, it's still rather disgusting, in a purely illogical sort of way.

of course, what do you think cheese is? do you know how they make cheese?

STORAGE
Cheese needs to breathe, therefore, wrapping it in plastic wrap is a "no, no." Storing cheese in plastic wrap creates moisture, which creates mold. If cheese from your grocer is in plastic wrap, rewrap it in wax paper before refrigerating. If you really want to be an extreme about your cheese, go right ahead and store your hard cheese at room temperature under an overturned flower pot.

Yeah I do but I figured it could be contaminated by other microorganisms now that it's been opened.
