I don't recall ever seeing a recipe for BBQ sauce that had caramel in it...doesn't mean someone hasn't tried it though.

That's probably it. It must have had a lot of brown sugar. When added to a fatty meat (like ribs), it could carmelize on a grill. You're not supposed to put sweet sauces directly on flames for this reason.

caramel is just cooked sugar with a bit of fat. i'm sure while cooking the sauce theres some caremelization going on
though most the sugar in much stuff today is high fructose corn syrup

well sometimes you dont cuz you don't need to use brown sugar to make caramel
probably most doesn't:p just try it, regular sugar rapidly becomes brown as it caramelizes.

I wasn't saying that ALL caramel is brown sugar and butter, but that's why, conceivably, bbq chicken would taste like caramel, since brown sugar is a common ingredient in BBQ sauces...

:p

If it was Sam's Choice BBQ we'd have a problem, but if it's 50 cents less than it is in the grocery store, or if you just happen to be there and just happen to need it, who cares?
