I explained it above. If tipping didn't exist then payrates would be significantly higher and the end food and beverage cost would be passed on to the consumer.
5$ for good service + $1 per additional person; why should people at a fancy place get paid better for the same work?
I'm seriously surprised at anyone who regularly tips over 15%. The USA is one of a few countries where tips at restaurants is normal.
In california with sales tax and a 15% tip, the clamor of the bill can be almost deafening. I've worked for min wage +tips on numerous jobs, and i've worked many more jobs with no tips. Folks working for tips deserve it, but no reason to shift them 20% of the bill IMO. At restaurants there's really no reason to ship >15% unless the service was exemplary or the waitress happens to be Ana Paula Leme. The people who can use the tip money more are the guys and gals who collect it out of tip jars.
