I have a decent sized rainbow trout in my freezer, but I don't know how to cook it. Any suggestions from the Iron Chefs?

Rainbow Trout is like a fine cut of beef, less is more. Nothing but a little salt, pepper, lemon juice, and butter. Sear the fillet in a well seasoned castiron skillet, and serve with haricot vert with a little almond and butter, and maybe some rice... the simplest is the best. :)

I agree with Smaulz in his preference. With trout, what you want to avoid is killing the flavor. That means fry it in oil/butter or use a batter or flour mix to coat it. No huge spicing is required.

If you want interesting variations, use the sauce to sautee veggies or add cream/worcestire sauce to the liquid and coat before serving.

Another variation is to fry it in olive oil to make sure it sticks together in a shape, then use a cream/parsley mixture in a pan and bake it until it is done. Braze the top for color, fry up veggies in the remaining sauce and some reduced broth and again, a great meal. Serve with rice or a pasta or any other grain. Try couscous, barley, or buckwheat for a very good meal.

GrandMothers Stuffed Trout.(My GrandMothers Own Recipe)


1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup sweet corn niblets
1/4 cup chopped peppers
1 large clove of Garlic chopped fine
1/4 cup Milk
Table Spoon Italian Bread crumbs
1/2 cup Flour
Garlic Salt
Pepper
2 eggs

Sautee Onions,Corn,Celery,Garlic, and peppers in fry pan with small slab of butter, until veggies are translucient.

Mix onions, corn, celery, peppers with bread crumbs garlic salt and pepper and 1 egg white.

Mix rest of egg with 1/4 cup of milk in bowl.

Dredge Trout filet in flour. Dip the floured trout filet in egg then dredge in Italian Bread Crumbs.

Fry Trout Filets in 1/2 butter 1/2 olive oil mixture melted and mixed in pan. Fry Both sides until brown. 2 - 3 minutes each side

Place trout Filets on tray, place veggie mixture on top of trout filets.

Sprinkle italian bread crumbs, garlic salt and melted butter on top of stuffing mixture on filets.

Bake in Oven at 350 to 400 (mostly dependant on Oven you use) for 10-15 minutes

Another vote for Smaulz's method. Rainbow Trout isn't a skank like Sole, you need to be gentle with it so you can enjoy it's pleasantly light fish flavour.

is that whole? broil it with some fruity (young) white wine with a bit of salt and pepper. actually, that would work for fillets too.

I agree with this, but skip the haricot vert (whatever that is) or almond and butter.

Eat is just as it is out of the pan.

2nd choice would be the same thing except on a BBQ grill.

A little lemon juice, or sliced lemon, any of your favorite herbs (thyme, rosemary, basil), black pepper, and of course garlic!

Its hard to cook trout wrong. Its that time of year to cook outside, though! Coat it in butter, maybe even a light dash of salt, than wrap it in tin foil and throw it on the BBQ. Simple is sometimes better...

defrost
cut into fillets (lengthwise)
put slices of butter into broiler pan
put trout on top
add 1/2 cup citrusy white wine
add more slices of butter on top of trout (be generous)
add some lemon juice

broil

eat

Wow, so many good ideas. I may have to have my buddy who caught it go down to the lake and snag a few more and mail them out to you guys. :)

I was kinda planning on broiling it with some lemons, but I really like the idea of the light fruity wine. And from what I read it's probably a good idea just to eat it as it is after I cook it. The meat should just flake off right?


MMMMMmmmmm, getting mighty hungry. May cook it sooner than planned. :)


EDIT: Oh yeah, it's whole, just minus the head and innards.
