It doesn't matter who the challenger is. The Iron Chef always wins, no matter how bad their dishes are :disgust:

fois gras is the liver of a duck or goose fed milk and fatty foods. The liver is basically white because it is so fatty.

Oh, that's easy. The ultimate Iron Chef match would be Iron Chef Japanese Masaharu Morimoto versus Emeril Lagasse. I'd want to see a quick 30 minute match between Iron Chef French Sakai and Alton Brown as a "pre-game show", however, just to see the mad scientist of food get his butt whipped by a REAL chef :)

Foie gras isn't Emeril's style, however, so I'd choose something neutral like Lobster or Beef steak for the battle that you suggested.

I'll admit that the Iron Chefs had an unfair advantage, but they didn't ALWAYS win. If you look at the stats, you'll see that some Iron Chefs only won 65% of the time.

I've eated at Emeril's (his main resturant in New Orleans) numerous times over the years, he is an AMAZING chef.
He dumb's down his cooking for televison - you wildly underestimate his cooking ability if you base it solely on what you've seen on t.v.
