FWIW, ceramic knives aren't great. You can't resharpen them at home, and they chip very easily. They might get you interested in esoteric kitchen knives and sharpening, though! That happened to me and I'm well on my way down the knife geek road: sharpening tools, Japanese carbon steel knives, bidding on vintage Sabatier on eBay 🙂

Ceramic knives are good for slicing. Don't do any type of chopping or similar action. You have to get use to them being so light though.

BTW I didn't mean to rain on anyone's parade -- I just was kind of underwhelmed by my ceramic knife and thought I'd pass it on.

It is easy to sharpen a ceramic knife with a diamond sharpener.
I have had my diamond sharpener for about 30 years...

They are a great if you are careful with them and use them mainly for slicing fruits and vegetables. They stay sharp much longer than steel and don't brown fruit as much as metal knives. That being said, I would (and do) only use them as specialty knives to go with a nice set of steel ones. I definitely wouldn't recommend replacing your steel knives with them.

Huh, like a diamond honing rod? I usually use water stones but a diamond rod seems like it would make sense. Doesn't chip?
