So, here are the Irish (okay, some aren't actually from Ireland) bands I know:
-The Cranberries
-Dropkick Murphies
-Flogging Molly
-The Tossers
-Wolfstone

As far as booze goes, I have no idea beyond Guinness. Let's hear it!

So you're making a list of Irish bands and you don't even mention U2? I mean, I don't really care for them, but they're undoubetly the most popular of the bunch.

Guinness, Jameson, Bailey's, Smithwicks, Killian's, Harp, to start you off.

I thought of them just after I posted the thread, and they're one of my favorite bands. :)

I can't think of an Irish brew worth drinking, but I will recommend:

Sharon Shannon, Maire Brennan, Paul Brady and Christy Moore for more traditional Irish music;

Sinead O'Connor, Elvis Costello and Kate Bush for (somewhat) more contemporary listening.
