A friend at work told me it's only possible to put songs onto an iPod through iTunes. Is that true?

No, there are several third-party programs that allow you to add songs to your iPod.

What's your price range? I use Shure E2Cs, but they can run between $70 and $100. Sony's MDR-EX71 models are reasonably priced (less than $40 at Amazon.com) and have decent sound quality.

Majority of people who have ipods should not be giving advice on the matter....

(i switched from an iriver to one so I'm not hating, just the tech. illiterate population who make up the majority of ipod users. If you don't believe me, try going to ilounge.com)

I used to use foobar2000 + foo_pod for my ipod, because of the superior sound quality, but IMO iTunes interface was 1232187x better. Then, I found out about mPlugin for iTunes. Skins on iTunes, an awesome interface, and foobar2000's sound quality.

Why yes there are many apps that will alow you to connect to an ipod. Yamipod is an example.
Now for headphones it depends on your price range. I personally recommend the Koss KSC75 headphones that can be bought for $13! Seriously! These headphones are 1232187x better than ipods stock headphones. You might want to check out the forums at head-fi for some more suggestions.

Those Koss phones are sweet for the price. I'd stay away from Sony, even their few good models are no better or cheaper than offerings from other companies. When you buy Sony products, you're financially supporting the mentality behind rootkit spyware - don't do it.
