Here's a neat feature I just discovered on my iPhone (firmware 2.1):
If you are downloading a file and for some reason can't continue (not on wifi & have an incoming phone call, taking too long on your current connection, etc.), simply tap the "loading" icon and it will pause. Tap again to unpause.
