My two cents having seen both now:
1. Screen - ip5 screen is better in quality, but the SG3 is bigger and has a higher resolution. Its quality is also very good, but not quite up to the ip5. Personally, I think I would take the higher resolution
2. Speed - Both feel really fast. The SG3 I had is the VZ one, but its rooted and has JB on it. I thought browsing on both was really smooth. Maybe I sensed the ip5 being a tad bit faster in scrolling, but that could just be me. It was close.
3. Battery - don't know yet.
4. OS - They are both great. I prefer JB of iOS 6, but I think thats because I really know how to navigate it, while I'm pretty noobish at iOS. They are both very good. Before ICS/JB it was glaringly obvious that android was behind apple. That is no longer the case
5. Build Quality - ip5. Its sexy, light, and looks good. Not that the SG3 is a dog, but lets be honest, the ip5 looks better. Build quality is also great. I still think the screen is accident prone since the glass juts out.
6. Camera - ip5. Its better. The SG3 is good, but the ip5 is better
At the end of the day, I think its real close. Remember when the non apple players couldn't bring a phone to market within a year of the iphone release that came even close to it? Those days are long gone.
I'd call it a wash to be honest.
