iOS Mail only keeps a few days worth of mail...

So my iPad and IPhone are both configured to use gmail over their pseudo-exchange server. All works fine except that only the last few days of email are kept. There doesn't seem to be any rhyme or reason to how many, but I can never look up an email from a week ago.

Is there a setting I'm missing? (iPad mail settings are set to display 200 messages, I'm seeing 20)
 
I noticed this too. I got super pissed today trying to track an email down from Monday. All I have is yesterday and today. I am using my work's exchange account.

Also, my 3G is lagging like crazy. Even listening to mp3s lag and break up when changing tracks. 🙁
 
If you go into Settings, Mail/Contacts/Calendars, Show 200 Recent Messages, then tap on Accounts/Gmail, Mail Days to Sync: 1 Month

It usually keeps any relevant emails for me over the past 2 weeks or so.

Ah yes, found the mail days to sync in the exchange settings.

So is there anyway to keep emails longer than a month? Save them to a special place or something? I can't even see my starred emails because they are all older than a month?
 
You can set Mail Days to Sync to No Limit and you'll have access to all your email in your Gmail account.
