Interval timer for EOS 1000D (Digital Rebel XS)

I'm going on vacation in a few weeks and thought it might be fun to use an interval timer to record the 8 hour drive. But I can't find any interval timers for the 1000D. There is a timer for the high-end Canon DSLR's on Ebay and someone said that it is only three wires and I could replace that connector with the 2.5mm stereo plug that fits my camera. No idea if that is good information though.

I don't want to have a laptop running for the entire trip to record images, so is there any other good way to make the camera take pictures once a minute or so?
