Like the title says, I'm wondering which chipset is better and what the differences between them is...

i875P is the better one. It has some performance tweaks in the memory controllers and you can get it with the Communcations Streaming Architecture (CSA) gigabit setup if you have a gigabit switch and feel that it would benefit you (heavy fileserving to other systems on your local network). Either chipset should work well, though.
