I have been putting off upgrading my old i5-2500K workstation for years now.

I am considering the Intel 10850K because it fairly good budget price for 10 cores. Note, I have MircoCenter locally that has it $319 (plus another $20 off with MB).

I am planning on running a couple of Virtual Machines and other network services on it, possibly more of a home server/workstation hybrid. I am thinking more Cores will be helpful instead of Less Core+Higher performance options.

Note, the other option is more expensive 8 core 11th Gen Intel or 8 core AMD Ryzen, PCIe 4.0 Gen might the main draw to those. Though honestly, note sure if I will ever need PCIe 4.0.

Any thoughts or suggestions?

A fast 10 core for what is effectively $300 is a great deal. There is no upgradeability, but that's no big deal given you were getting by on an old quad core until now. Invest in both cooling and a board with the power delivery required to avoid performance issues, and you are golden.
