Instant Backup Software

I'm looking for recommendations on software that watches a folder or folders and instantly backs up any files that change or are added.

robocopy can keep stuff in sync. But backing up something like this would involve a ton of overhead. What exactly would constitute a change? File acccess, modification? Also, how would it keep the files separate and out of site of the user.
 
Well, to be more specific:

Upcoming project involves taking pictures of 11,000 products. Camera will be tethered to laptop. I'd like a program to automatically copy all images from the laptop to an external HD to create redundancy.

Files would change only because they'll be renamed as they're shot (to a proprietary item code).

I could just manually copy the images over every couple of minutes, but I'd rather it be automated since it's 11,000 images.
