So Dynamic Disks is basically a software RAID through windows. Will there be any performance increase when using two drives of different capacities? And once you've done this, you cannot simply remove one drive, correct? Is there any way?

Not sure what dynamic disks are but 2 drives with different capacities running RAID 0 should increase hard drive reads/writes time a little. You can't remove a drive from a RAID 0 array because it's half of the array. With RAID 1 you might be able to remove a drive because it's a redundant copy, I think it depends on the RAID controller.
