on the non-rock scene, I've also been listening to a lot of Joni Mitchell, Paul Simon (Graceland = greatest album evar), Prince, and Little Richie.

Queens of the stone age?

Some ones mentioned above that I like a lot are Mr. Bungle, Dillinger Escape Plan, and Meshuggah (probably my favorite band).

Some more recommendations:

cryptopsy
gorguts
burnt by the sun

spastic ink
