So I'm looking at buying a new headset/headphones, and I was curious as to what Impedance had to do with. From what I've read... higher the better?

Not necessarily. Correct is best.
You might want to read about Q-factor.

Read the attached article. Impedance in audio systems was once very important to good sound quality, but modern, solid state electronics have greatly lessened that importance.
