I'm tagging all my MP3's - I never know what Genre I should set them...

I generally tend to ignore the Genre box, I'm in the same boat as you. Most of my music would be "rock" but I don't know whether to name it all rock or segregate it into "classic rock," "alt rock," "hard rock," etc.
 
There's really no point in using it. I've never tagged my mp3's with Genre or Year. I know my artist and albums. That's the only thing I really care about.
 
I try to limit myself to as few genre's as possible

That's pretty much covers everything I have.

I like to be able to select my music on my ipod via genre. Wrong ID3 tags on a 30gb iPod or multiple variations of genre/album/artist spellings = screwed
 
I struggled with this issue for quite some time and retagging my colleciton is a pain considering I have 40K tracks mostly as full albums. I originally thought that having as few genres as possible was the best to keep things simple but then under the "Rock" genre you would have Boston right next to Adam Ant which makes no sense to me since the moods of the music is completely different. Because of this issue I started using styles, which are really sub-genres, as the overall genre. It suits my needs better because if I want to listen to punk, or someone using my jukebox PC at the lakehouse wants to, the database will show all the punk music grouped together. Same for New Wave, or Brit Pop, or any of the other many sub-genres I use to tag my collection. I try to keep things organized to group my music by moods since mostly I have Rock music and using that as the prevailing genre would be useless.

For help in determining what groups and albums should be tagged you can go to www.allmusic.com and use their listings to aid you. That is what I do and I am very happy now that I have retagged all my music properly. Since I use WinAmp as jukebox software for partys it is nice that people can use the Media Browser and easily group my music together by style to quickly pick some albums they want to hear. My collection is far too large to browse by folder anymore. It is easier to determine what type of music you want to listen to and then see what I have that suits your needs.
 
Some of allmusic.com selection of genre seems questionable...

I don't think John Mayer - Heavier things (the CD) should be considered rock.

That is the overall genre....hence why I go to the styles section for guidance. Rock is a very general genre.
