Your problem is the DEMO. The demo of the game was released before, long before the 7800 GTX and cannot properly detect the card. Also, there are some texturing issues with the demo and the 7800 GTX. If you purchase the retail version of the game and patch it to 1.33 (I think that is the latest) you will have nothing but gaming goodness.
Edit ** in addition, not only did the new 7 series have the problem, but so did much of the 6 series of cards. It is the demo, not the card. Purchase Far Cry, it is only, what 20 bucks now? Definitely worth it.
Edit 2 ** I am not sure why your other games would be stuttering more... I am guessing perhaps the BIOS patch for your motherboard isn't a complete fix. The card is faster than your 6600, easily. So, do not blame the card and it was not a waste of money. The problem is likely your system. You can certain do an OS reinstall, it would not be a bad idea... But, it has been my experience that it is not needed when staying with the same graphics card. Meaning, you had nVidia, and you replaced with nVidia, therefore, the existing drivers should have detected the card and install it and be working properly. Even so, I rarely have had a problem going from ATI to nVidia or vice versa. Anyway, fresh install is nice to do anyway.
But my feeling is that something is wrong with the motherboard, it must not be supporting the PCI-E correctly... Who knows, you are going to have to troubleshoot it to find out the problem.
