I plan on spending a fair amount of time in the water. Might rent a surfboard if I can find a decent spot with a sandy bottom that isn't too crowded.
 
There have been a lot of other Maui threads in the past couple of months - I would look at them for some good suggestions.

But here is a good start:

drive the road to Hana
Haleakala National Park
Old Lahaina Luau
Snorkel
Surf / wind surf on the north shore
