Go to Pacific Beach for surfing lessons...or La Jolla Shores. Check out La jolla children's pool area where all the seals hang out. Check out Torrey Pines glider port just north of La Jolla where they paraglide off the cliffs. Might want to go to the top of Mt. Soledad which is also in La Jolla, it has great views of San Diego county.

I'm up in LA until Friday myself. If you got a decent rental car, finding a curvy road is fun. They gave me a Nissan Maxima so I drove the curvy part of 23 with it. Talk about winding turns.

Mission Beach/Pacific Beach is a good start. The surf is usually small so you won't get too hammered. If surfing is your only interest, you need not go any further.

Other options: San Diego Zoo, Seaworld, Wild Animal Park, Balboa Park, Golf everywhere, Tijuana, Ensenada, Gaslamp Quarter, Hotel Del, Rubio's, The Murph, Taylor Guitar factory, Anza Borrego, somebody stop me...

luke had some good ideas, mission bay is nice too. Oceanside is a nice place, the flower fields in Carlsbad, Wild Animal Park in Escondido, San Deigo zoo, Del Mar, Lo Jolla, Old Town, Balboa Park, Pacific Bean, Mission Beach, seals in La Jolla, Sea World

Please, stay away from Escondido as much as possible. It's is the sh!thole of San Diego. If you want to visit the Wild Animal park get off the I-5 by the Via Rancho Pkwy exit.
