Which modchip/version should I use? I hope to order it today. I'll add to the pole as I get suggestions.
Bonus points for suggestions such as "don't forget to pick up the solderless adapter", "go to xxx and get xxx so you'll be ready when the chip gets there" and "go buy it at xxx".

To head off tangents...
I don't want to do a softmod and we don't use xbox live. I do want to have that functionaity though. I'll be adding a larger hard drive later. I'll also upgrade the dvd drive later.
Budget for the chip is around 100 bucks give or take.
I'm currently thinking of purchasing the chip at modchipstore.com.

I don't know anything about the Xeniums but I have an Xecuter 2 series chip and it's great. Just popped it in and can toggle it on or off to get n Live and everything. I love it.

Definitely worth it. I have an Xecuter 2.3b lite and it's fantastic.

I have the Xecuture 2.3b lite (solderless) as well. I think it can still be found for around $55 or so, comes with a switch to turn it off and on, etc.. Works great.

That being said, keep in mind that I, along with many others, did recently get banned from Xbox live for having a larger HD installed. So once you do that, don't plan on "having that functionality" any longer.

For games that support System Link play you can use xbconnect to play online though.

Even if that's the case, the OP said he was going to be adding the larger HD later, thus bringing the ban down from Xbox live.

Xecuter 2.3b + EvoX Stealth Install + Locking the HDD + Turning off the Mod Chip = No ban. Provided you don't screw up somehow, or that Live doesn't add in additional detection schemes.
