When using a program like, say, Everest, you see both the "CPU Temp" and also a "Core" temp for each core (Core #1, Core #2, etc.) Which reading are you most interested in/report to others?

Since CPU temp is a good indicator of how your cooling solution is actually working, why not just use it ?
Under what circumstances would your core temps be a problem, while your CPU was reporting an acceptable number ?
