I want to get my niece an ipad mini from amazon so I can utilize my credit card amazon points, can I add applecare later on if I go this route?

I think as long as it's an authorized third party reseller you have 14 or 30 days to contact Apple and get Applecare.

60 days from time of purchase to get AppleCare+ (iOS devices), but 1 year from time of purchase to get AppleCare (computers).
