Go into Settings > iCloud & see what the email address listed in there is. From there, you can reset it online:

https://appleid.apple.com/

If it's blank, you can create a one either from the iPad or online, either using a free iCloud address or a personal email address.

but the main problem cannot open the ipad only asking the icloud account...and how to go in the setting? thanks

You'll need to get with your uncle, get his iCloud information. He left himself signed in when he gifted the iPad.

It's in the Settings app. If you can't login to the iPad & don't have the account, you're going to have to do a factory reset on the iPad. That will work assuming there isn't a login PIN required, which it will ask you for when you restore it.

Reset is going to run into the iCloud activation lock. If OP cannot even unlock the device (not sure why it's asking for the iCloud password to unlock it IF all they did was update to the latest iOS).
