Can using the integrated graphics with this kind of setup run two monitors at once? I can't seem to figure it out for certain... seems like people say it depends on the board.

I was looking at one of these:

ASUS P8Z68-V LX LGA 1155 Intel Z68

ASUS P8H67-V (REV 3.0) LGA 1155 Intel H67

I plan on getting a video card down the road but just want to know if it'll function in the meantime. Gaming is not a concern right now, will just be running Adobe CS5 and similar.

yes, 2 monitors....

though DVI/HDMI is limited to 1920x1200... you can use higher resolution on VGA or Displayport

if you want to be really really sure, search and read the manual

Right, I haven't come across a motherboard with 2+ video outs that doesn't support dual displays. Even the crazy Shuttles with 2 digital video outs supported them both somehow.

What I'd like to know is whether the current 1155 boards with 3+ video outs will support triple displays with Ivy Bridge. Then switchable graphics with AMD would be nice.

possibly 3x (if one is a displayport?, giving the same problems ATI have with RAMDAC to create eyefinity)

but probably not, since the mobo has to route the video pins from the cpu to video out... some of those video out have to share pins or something(saving costs) if Sandy Bridge doesn't support it, IvyBridge probably won't either...
