You can do it without extra applications, but I would recommend a .wav recorder like Nero has. Depending upon your soundcard you might even want to use a cheap preamp/mixer for processing the signal, but you can also just use the mic input.

After that you can just experiment with input levels and mic placement (near the soundboard is good I think). Starting and stopping the .wav recorder is simple, and once you've captured the .wav you have loads of options regarding filtering, saving to various formats, etc.

Not a very exhaustive answer I know, but maybe gets the ball rolling here for suggestions for you :)

If you're more interested in getting the notes and timing into the PC, than the actual sound of your physical piano, you might look at some of the MIDI-capable keyboards out there. Lots of the newer keynboards will produce MIDI output that records a digital representation of your notes. This doesn't capture the sound of your 'real' piano; rather, it records the music in a series of notes and information about those notes (timing, et c), that can be replayed on a PC. Your local savvy music store may be able to help with the specifics; if you have an electric keyboard already then you may already have this capability.

The only thing I would add is that there are special pickups for acoustic instruments like piano and guitar that will do a much better job than a mic, and they aren't very expensive. Typically they consist of a small piezoelectric pickup with some nongreasy putty on one side. You stick this to the soundboard and it will get you much better resolution and detail than an open mic.
