I've gotten many steaks free because the cook does'nt know how to cook anything well done ;) If it's done right though, I always leave at least a $20.00 tip just for the cook.

Everyone has their own preference but Med Rare is "EASY" to cook & restaurants love to herd you in and out of the establishments ASAP. I let them know ahead of time I'll wait 1.5+ hours for my meal. I'm a patient man for a good Ribeye or Porterhouse!

No matter what people say, Well done (done right) loses no flavor over a limp peice of med/med rare!

I worked at a restaurant that REFUSED to refund any well-done steak period. BTW
whether it's well-done or med-rare the steak MUST be placed on a hot grill so searing
can lock in the juices, grilling 101

I think that as one gets older and wiser you like a steak more rare. This definitely depends on the quality of the meat because if you get a good cut of meat it will taste great raw, lol.

Medium rare is best for most folks. Once you become a steak connoisseur you will always order rare when you are in a fine restaurant. ;) :wine:

I've been eating rare steak for years. Its so much damn better. I can't stomache even a medium, let alone well done. You just cook all of the flavor away.

Btw, I usually order a porterhouse or T-bone. Because bigger is better.

steak is probably the only meat that I'd eat not fully cooked. beef is very tough if you cook it fully but not to the point of tenderizing it.

The waiter explained to me that this particular cut would be really dry well-done, so he recommended that I get it medium, still red and juicy but the outside is done nicely. It was absolutely delicious, I realize the flavor I was missing all these years by getting it well-done. Also, the resturant had real dim lighting, I could barely see my date across the table, let alone see how red the meat was. But it was certainly delicious.

I had a rare+ sirloin steak last night... the bloodier it is, the better!

You sound like a albertan, me the the roommates cave-manned some steaks the other day.

Cave-manning is eating it blue rare for all you know dont know. little heat on the outside, bone cold and bloody as hell on the inside...

Are there any health concerns when eating steak that way?

Though dining out and having steak is nice, I still find BBQing it yourself at home to be an economical choice, assuming you know how to cook it the way you want it to be.

Some grocery stores carry ribeye/sirloin/filet mignon cuts that are aged 21 days or so. How do those compare to the non-aged cuts? More tender and flavourful? Same with restaurants that advertise how their meat is aged 30 days.

I'm curious about that too, and about how you age a steak without it going bad.

I like steak pink on the inside but not bloody, so I usually order medium-well. I suppose I really don't care for the flavor of basic steak all that much, regardless of how it's cooked...I'm really just eating it for the marinade + the texture. If it's not marinaded, I usually drown it with steak sauce.

well-done or medium-well, that's all I will EVER order, if I see too much red they'll just have to keep cooking till I'm satisfied.

I used to be the well done king when I was a kid. Once I got older I began to appreciate the flavor of the pink meat (take that however you want) much more. Medium/medium rare is the best.

I was in the same situation a while back. I used to get well done all the time then eventually I accidently got medium rare because somebody ordered for me and I loved it. BTW, beef tartar is absolutly amazing.

I usually like my steak rare or nearly still mooing if the cut is good. :D A well-done piece of meat can be really good though if it's slow-cooked (smoked ftw).

I used to order mine well-done but I started moving down and now I'm at medium or medium-rare. Soooo good.

Do you remember what cut it was?
No, but it was off the bone.
It had some French name. ;)
châteaubriand?
Possibly, I don't remember.

filet mignon?

Anything over medium is burned. Done means burned. Well-done means crispy burned. Steak should melt in one's mouth like a pat of butter, with scarcely a chew required.

No one cares that some of you have the ability to see tenderness in shoe leather. :)

As I wrote before, I think the cut I had was called L?Entrecôte.

You two remind me of people that always complain that beer is skunked. At some point, you're just not a beer drinker; steak-eater.

You also remind me of the people that actually do believe that A1 is 'how steak is done.' In reality, A1 is merely a pungent sauce made to hide the 'game' or mask the taste of advanced meat.

I used to work at quite a reputable steak place, in my opinion
Prime T Bone Bloody as hell FTW
