...except there isn't really. The nicest cuts of meat are the least flavoured. Lamb, moose, elk etc have flavour. A tenderloin steak is pretty lacking in flavour by comparison.

Don't get me wrong, I love a good prime rib/ribeye steak myself.

Ribeye = flavor (mmm.... melted fatty goodness).

Filet/tenderloin = extremely tender but little flavor.

This is why I look down my nose at filet snobs. Filet is for people who want to look like they love steak. Ribeye and Strip are for people who really do love steak (Porterhouse/T-Bone is okay because you get both the Strip and the filet).

Yup. Real steak enthusiasts usually get Ribeye Medium or Medium Rare, depending on the restaurant. A lot of places that serve huge cuts of meat undercook the meat (Mastro's does this) and a Medium is really a MR and MR is really a rare.

I thought Mario was actually supposed to be a good chef? Istr some chef here in Austin talking about what a phony Flay was, but he seemed to respect Mario. Maybe I'm remembering wrong.

I really hate Flay in any case. :p

Mesa Grill is a good restaurant, though... or at least it used to be.

NOBODY beats Peter Luger for steaks in the NYC area, though. NOBODY.

Well done is disgusting and flavorless... I have always eaten medium rare or rare steak, occasionally I will get a blue rare steak for something different...

Medium Rare for the win. What's the point to cooking all of the juices out?

Rare for me. What's the point of cooking even some of the juices out?

With medium rare, you might as well be eating shoe leather. I like my meat to taste like meat; thank you very much
Rare ftw. My only issue with that is I once ordered a steak and it was quite cool in the center. I sent it back for another couple of min. on the fire, but still it wasn't pleasant.

Why anyone would ever order a well done steak is beyond me. You got what you deserved. Hope you've learned your lesson.

One of the reasons that I like Peter Luger's as that they have professional career waiters from Brooklyn who don't take crap from their customers. If you tried ordering a steak well done from that place, they would probably scream at ya :)

Well done steak is disgusting, and burns off all the flavorful fat.

We didn't become the great species we are eating burned protein.

Yeah... You're not going to get a really good steak from Applebee's. I'd pony up an extra $10 and get a steak from Outback instead. I believe that they do curbside pickup as well.

I've had some damn good steaks from Applebees recently. They've definitely improved quite a bit. I used to be a Ruby Tuesday frequenter until their steak quality went straight to the crapper. I asked about it and they said they had switched suppliers. I have gone back and given them a few more tries in the past years and they are still crap. Applebees is actually pretty good right now...

And more in line with the thread topic, I was always a medium orderer. I switched to medium rare only a few years ago and its definitely the way to go. I've even managed to convert some other people.

I used to order my steaks well done too. Now I get medium (pink but not bloody). I tried medium rare, it was just too red/bloody for me to eat.

Well done is such a waste. If it's a good steak house, I get rare. If it's not, I get medium rare. Rare is hard to do well...

;)

The problem is with most of you is that not many people know how to cook a well done steak! You always burn it!

I like it well done, NOT BURNED! Zero pink, perfectly tender and you also need to butterfly the damn thing! I don't like shooting my food after they think it's cooked.

I've gotten many steaks free because the cook does'nt know how to cook anything well done ;) If it's done right though, I always leave at least a $20.00 tip just for the cook.

Everyone has their own preference but Med Rare is "EASY" to cook & restaurants love to herd you in and out of the establishments ASAP. I let them know ahead of time I'll wait 1.5+ hours for my meal. I'm a patient man for a good Ribeye or Porterhouse!

No matter what people say, Well done (done right) loses no flavor over a limp peice of med/med rare!

wipe the ass, cut the head off and walk it past the fire. A little salt and pepper.

I like good food, who doesn't?
Just because in the past I liked it differently from how you like it doesn't mean I don't like food.

Not to be a smart ass, but PLENTY of people don't like good (read: fine) food. You have over 20k posts on ATOT where people pride themselves on eating Ramen. Yet, you still have to ask?

Wipe the ass? Is that your marinade? I doubt the salt and pepper can hide the flavor of ass. Well, I suppose raw meat will accentuate the ass flavor........... Mmmmmm, the aroma.
