I recommend "Ran" if you haven't seen it by Akira Kurosawa.
It is from the 80s, and IMO it was his last truly great film.
Any reason why you don't want to see older than 80s?
Just asking since films like Seven Samurai, Ikiru, Rashomon, and Red Beard are fvcking awesome masterpieces.
Also, I wholeheartedly agree with Soulcougher.
Jeunet is a friggin amazingly talented director.
Amelie was his best work, and is really a "must see."
In addition to Soulcougher's list, A Very Long Engagement is fantastic. Set right after WWI. Probably his most "serious" film.
(If you want to see his most stylish film, go with MicMacs first.)
You've probably seen this as you like foreign films and focus on Korea, but Tau Guk Gi is very high on my list.
I have seen a good portion of what Awkward recommended and they were quite good. Of the list you hadn't seen, The Chaser was fantastic. The Man from Nowhere was damn awesome too.
Haven't seen these yet, so they're getting added to my watch list too

Peppermint Candy
The Yellow Sea
A Bittersweet Life
Chungking Express
A Moment to Remember
PS .... are you on letterboxd ?
