I want to run one 30" and two 19" LCDs ... What do I need MB-wise?

I'm assuming a suitable motherboard for this type of setup would be an SLI-motherboard running in non-SLI mode w/ one video card driving the 30" LCD, and another card driving both 19" LCDs. Is that correct?
 
Best board choices depending on cpu would be: Asus P5E64, ASUS P5K64, ASUS P5W64.

P5W64 uses the old 975x chipset.
 
Can a Crossfire motherboard be used with dual-non-ATI video cards in a non-paired configuration? Just using the two cards as individual video cards?

I was thinking of going with dual 8800GT video cards as my video cards, and a Core2 Quad Q6600 as my CPU (unless a 45nm quad comes down in price sooner than I think it will).
 
You can also pick up a motherboard with SurroundView + 1 ATI PCIE Card. This'll give you up to 4 display output.
