Use a thermistor for the temperature sensor, grab a bunch of multicolor LEDs, use a voltage comparator or something to switch them?

Yep, an OPamp should work. You could probably do it with a multicolored LED if you only wanted 1 "light".

I would recommend getting a multicolored LED rather than several LEDs of different colors. That would likely be cheaper. I'm not sure how you would get smooth transitions between colors...

It would be best if you used cooler colors (blue/green/purple) for high temperatures and hot colors (red/yellow/orange) for cold temperatures. You don't want your room looking like an inferno if it's 100 degrees outside...

Define the reality matrix for your average lamp in such a way that a temperature sensor can identify convert temperature to color as a quantum fluctuation of space-time. Set your clock back by three hours before you do this. Just trust me.
