I want to cook pork chops in the oven

Is there any good way to do this? I have 4 pounds of pork chops (six of them), probably 3/4s of an inch thick. I hate doing them in a pan because of the greasy smell. I was hoping I could oven-cook them, I won't eat them all but I'd gladly cook them all, eat 2 or 3 and fridge the rest for later.

A brief bit of Googling says they may get too dry with slow-cooking. What do you think? I have an oven and I have a small, convection-style toaster oven. Any ideas? Also, forget about wine, onions, parsley or any of that crap - I just wanna eat some chops with my Sweet Baby Ray's BBQ sauce, and boil up some frozen veggies to go with.

Alton Brown's pepper-pot pork chops are nummy. I didn't find the recipe on a quick google / youtube search but if you feel like digging around it'll be worth it. I think it was in a Good Eats season 10 episode.

brine them to keep em juicy. google that, and then google cooking them in the oven. i coat mine in some honey mustard and dip em in bread crumbs.

i like mine at about 145F or so, also helps.

Are you sure you like pork chops? Are you sure you like food? Better put the real meat products down and go to the nearest McD's for a McRib.

for goodness sakes, season them the way you like them and then broil them.

Cast Iron skillet would be best--super heat that bitch in teh oven (500?), then sear both sides for just under a minute on high heat, then cook for mebbe 3 minutes at 500, flip, 3 more minutes.

Savor the juicy.

well, it works for steak, anyway. :p

pan-seared pork chops are great though, just not completely sure how to make them. I can only assume it goes something like that.

pork chops will dry out faster than steak.

he should just broil them. Its easy to do and fairly quick. They are juicy too if not broiled too long.

I'd use a dutch oven. Hit em on high heat on a burner on top of the stove to give them a quick sear, then into the oven with a little liquid to braise them. That makes them nice and juicy without any fear of drying them out and you can impart whatever flavor you want through the braising.

Sounds like searing first then oven cooking is the way to go. I'll do it tomorrow when I have more time.
