Interesting you should say this as I'm listening to some of the chillest jazz stuff I've ever heard. While not traditional jazz and more trip-hopish, Blockhead is an artist that has not produced a bad song. Real nice piano and sax parts, hell, it's all hot as heck.
He is the producer for a few underground hip hop artists but his solo work is real laid back. Check it out.

Bossa nova, in additon to being freaking sweet, is definetly jazz. Just brazilian jazz.
