I ordered a refurbished K7S5A (Sis 735 chipset) from NewEgg, but they sent me a K7VTA3 (kt266a chipset) version 2.0.
I don't know if I should keep it, send it back for a K7S5A, or return it and get something else. I don't have any DDR so I can't test this board. Can someone with experience with both the K7S5A and a VIA KT266A boards recomend what to do?

I would call newegg, and be sure they have the k7s5a in stock or other refurb sdram board. If you don't have a backup system, might save some time and order some generic ddram and keep the board.

If it'd been a K7VTA2 (w/ SDRAM-or-DDR setup), I'd have said keep it. With K7S5A still being made and very popular, I don't see why they should be unable to send you one. Maybe you can twist their arm to send you a NEW one as a compensation for their mistake ;)
