I need some help with video compression.

Well, my wife got all of her old VHS tapes from when she was growing up and we're wanting to make some DVD's out of'em all, so we could give'em out to her grandparents. We've already recorded them and they range from 2GiG to 10GiG, depending on long of a video they are, longest one is 2hrs tho. Anyhow, i used Adaptec VideoOh! USB and captured w/ Sonic MyDVD. If you need more info, just ask me and i'll try to get it for ya. They were compressed to Mpeg2 format. Thanks in advance for the help, very much appreciated.
 
You should be able to just drag them into Nero (CD/DVD mastering software). If they're already MPEG2 Nero shouldn't even need to mess with them or encode them further.

so what is the question?
 
You need to use some sort of DVD software, and editing software wouldn't hurt either. Using dedicated software will allow you to fix the files so they fit on a DVD. By just importing the video into straight MPEG-2 using the settings your encoder chooses, you have no control over the bitrate. You need to adjust the compression of the file so it will fit on a normal DVD.
