What are some good recipes that you guys know of or made up yourself? I want to make something besides the regular meatloaf, meatballs, meat sauce, etc. I'm working with ~4.5 lbs. Oh yea, and it must be good ;)

Ground beef browned, can of tomato soup, two table spoons of mustard. Salt/pepper and maybe some cayenne.

when beef is browned toss in soup, mustard and salt/pepper. simmer for 10 minutes. Serve on buns.

sloppy joes.

How about Greek meatballs or Greek hamburgers? ;)

I like either with pita & tzatziki. I often serve bifteki as a hamburger -- pita "buns," feta on top, lettuce, tomato & onion slices with some tzatziki as a condiment. Great with homemade fries.

If you don't mind a little more work, try your hand at making moussaka.

tacos

brown meat
add 3/4 cup can of tomato sauce per 1.5 lb of meat
add 3/4 cup water per 1.5 lb of meat
packet of chili powder per 2 lb of meat
some fresh garlic
1 ounce of Franks or any hot sauce you like per 2 lb of meat

simmer over low heat stirring once in awhile, simmer until thick. (no liquids running)

or, brown beef, add chili powder add in Velveta Cheese, or cans of nacho cheese. Hot sauce/Jalapeno's to taste. Put in bowl, get bag of Tortilla chips and eat said dip with chips.
quick and easy.

I got 275lbs of elk burger and steaks, I gotta come up with more stuff to use it with.

Elk chili sounds awesome.

That doesnt count the 42 pounds of burger I got out of my deer this year too.

Just roast some beef on a really hot plate (like 30 sec on each side, depending on thickness). Then turn off and drop like half of chopped onion there. UMMY!

Throw in a pot with chopped potatos. Boil for a while and eat.

I'm of Scottish descent so that recipe comes naturally. yum.
