I made Vegetable Beef Stew

I made an awesome batch of vegetable beef stew.

9 hours in the crock pot and the whole apt smells wonderful.

I have a 6L crock pot so there is plenty of stew to go around.

Ingredients:

2 lbs of organic stewing beef
1 lbs of potato sliced
1 medium onion diced
5 stalks of celery diced
5 cloves of garlic minced
1 lbs of frozen mixed veggies (carrots, peas, corn, lima beans and beans)
enough water to cover mixed with Club House Beef Stew seasoning for Slow Cookers.

cooked for 9 hours and thickened with some flour.

this is great comfort food, especially now that we have snow and cold weather.

OMG, i need to fire up my crock pot. PERFECT weather for walking into the house to that wonderful smell, and a meal that's pretty much ready to eat.

Maybe it's just me, but stew has always been a considerably boring meal to me. However, comma space, that looks good :)

I forgot to mention I put 1lbs of sliced cremini mushrooms in it too.

Normally I am not a "stew" type meat-eater, but this sounds good. I would change just a few things.

So far I have done Chili and Pulled Pork in the crockpot, I think I will try something like this next.

I made a vegetable beef soup last night.

Usually when I make beef stews/soups, I use prime cuts of bone-in beef. Making your own broth is alot better than using the cubes or the store bought stuff, and using prime cuts of beef tastes a hell of alot better than stewing beef.

Fill up your pot with water and bring it to a boil. Toss a porterhouse or two into it with some salt, garlic, and bay leaf, and let boil for about an hour or two.

This will make your broth.
Bring temperature down to a simmer. Take steaks out and cut off most of the meat and cut up into bite size pieces and toss back into broth. Toss the bones back in while everything cooks. Add in desired vegetables (carrots, celery, mushrooms, onions, etc...)

Add spices (salt, pepper, chili powder, mustard seed, lots of herbs).

Might I suggest barley instead of potoes? I like the tase better, but thats just personal preference.

The other good ingredient is to get a can or two of whole-canned-tomatoes soaked in garlic and basil and toss those in.

I've done chili, pulled pork, ribs, stew and pot roast in my old crock pot, they all come out excellent.

I prefer a crock pot because I work alot and don't have the time to do stuff on the stove top.

Don't dis my stewing beef. This isn't the crap that is sold at grocery stores. This is pure organic stewing beef from prime cuts with almost no fat and no grissel. Just fantastic tender beef. Its more expensive than the grocery store stuff, but its worth it.

I know all about that.

That's why I bought the 6L one to replace my old 3.5L crock pot.

Did you put the flour in at the end or the beginning?

when adding flour/starch as thickener.. do it at the end... and just a little at a time as-needed... or go with a butter-flour mix

yep.

I dust the meat with a flour/salt/pepper blend before going into the crock pot, I got that from an old recipe.

I use flour at the end to thicken it up.

there are so many easy and delicious recipes....

chuck a couple/few boneless skinless chicken breasts in there and some broccoli cheddar soup. add some potatoes...

mmmmmmmmmmmmmmmmm

i'm hungry

Try some chicken breasts, cream of chicken soup, rice, salsa, black beans and corn. It's an effortless and tasty Tex-Mex casserole.

For you guys new to cooking. When adding flower, mix it with some broth/water in a smaller bowl outside of the crockpot. After its been nicely absorbed, add that flour mixture to the crockpot. Don't just add some flower and expect it to mix well.

And for you guys really new to cooking be aware that many types of flowers are bitter, inedible and/or poisonous. Flour on the other hand is usually safe.

Lean meats don't fare well for broth. Use a cut with considerable fat on it (Chuck roast, small bottom round roast, etc), and it will come out much better. Use a slotted spoon and remove the fat after it has cooked in the crock for 5-6 hours. It will be much richer.....
