I made potato salad tonight

I bought a 10lb bag of new potatoes and decided to try making potato salad.

I used different recipes to come up with something good.

The potatoes were not very big so I used about 10 of them. To make things interesting i decided not to peel them (I like the skins).

Recipe:
10 small potatoes boiled
1 cup (or so) of mayonnaise
2 tablespoons cider vinegar
2 tablespoons sugar
1 tablespoon yellow mustard
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper
6 diced green onion
4 hard-boiled eggs quartered
paprika

combine the mayo, cider vinegar, sugar, yellow mustard, salt, garlic powder and pepper in a bowl.

cube potatoes in a larger bowl and then add the sauce mix.

then mix in the onions and eggs and then sprinkle with paprika.

then chill in the fridge.

this turned out great!

Wife just had Rachel Ray on and she was making a sweet potato salad. Sounds very interesting......

My receipe that I came up with:

Cut 8-10 red potatoes into 1-inch cubes and boil in salted water.

After draining and cooling potatoes, mix in 1 cup olive oil mayo, a couple tablespoons of spicy brown mustard, 4-5 scallions cut up, balsamic vinegar to taste, honey to taste, a couple spoon fulls of feta cheese, Kosher salt and cracked black pepper to taste
 
Sounds awesome. I love potato salad. Now I know what I'll be craving all day 🙂 .

There are so many interesting potatoes in the markets these days - the texture/flavor/etc of the potato makes a big difference (duh). Fun to experiment.
 
Sounds good. It is very similar to the recipe I use, although I like to use a tablespoon or two of the pickling liquid from dill pickles instead of the vinegar.
 
im one of the few who really does not like potato salad. mostly because the thought of all that mayo makes me vomit

i make a potato and bean salad which has a oil and vinegar based dressing

No sweet pickles and pickle juice = fail!!!

Butter
Mayo
Salt
Sweet pickles
Pickle juice (sweet)
Mustard

That's all you need for creamy (non chunky) potato salad. Yummy.

Always one in every thread...pretty sure that if he had made it against your potato salad bible he can still call it whatever he wants, it's just food.
 
Baked Potato Salad

5 pounds of new red potatoes
1 bunch of green onions, chopped finely
1 pound bacon, cooked and chopped
8 oz. sharp cheddar cheese, cubed into 1/4″ cubes
3 c. sour cream (I used the lite sour cream for this dish)


best.... stuff.... ever.....

god damn they are fucking gross
I like sweet pickles, aka bread and butter pickles, as a snack.

Strubbs makes an organic Bread and Butter pickle that is just amazing. They are sweet and spicy at the same time.

Just plain awesome.
