I made brandied pear souffles

I spend 2 hours making brandied pear soufflés for the kids and wife to eat before they hit the hay, my mother-out-law calls when they come out of the oven, and all three of them stay on the phone for 45 minutes :| They come back, look at the fallen soufflés, and pass.

At least MINE was delicious :| x 42

Like this

It's a very light, airy dessert. However, you have to eat them within 10 minutes of taking them out of the oven or they cave in and become egg-ie tasting.

Speaking of brandied pears, I still have not flambeed anything in the 10 months I have had a gas cooktop.
