I wonder what kind of knife that is?

Looks like high carbon steel. If it is that knife must be cleaned and dried right after use so it doesn't rust as it's not stainless. In the first video I can do everything he did right up until 2:25.

Why didn't he just put the scallions in a food processor?

It would utterly destroy them. A sharp chef's knife with the right skill is just as fast, makes for much less cleanup and doesn't smash them to pieces flinging the essential oils, juices, flavor and nutrients all over the place. You might as well take a hammer to them.

Now if you want to puree them, that's another matter.

Short answer: You didn't just ask that did you?
