I love the outside part of the Ribeye. What's it called?

the semi-cricle piece on the right hand side.
Love that piece.

i bought a 5lb ribeye loaf (for lack of a better word) and just cut that piece to cook.
then cooked the rest of the loaf in like 1lb increments over a week.

what is that piece called? the butcher at my local supermarket and Costco were clueless.

i just want to buy that section. (neither supermarket nor costco would just sell that. :( )

I know exactly what you're referring to. The particularly marbled section that seems to fall apart in ones mouth in a most satisfying way.

You probably won't see it often as what's left of the loin piece won't look very good and will be a tough sell in the meat case. If you want something more affordable and more readily available try "sirloin cap meat", it's available when "sirloin fillets" are made, very tasty, can be used for shis-k-bob, breakfast steak, fahatias, or on it's own as a steak..
