Love that piece.
i bought a 5lb ribeye loaf (for lack of a better word) and just cut that piece to cook.
then cooked the rest of the loaf in like 1lb increments over a week.
what is that piece called? the butcher at my local supermarket and Costco were clueless.
i just want to buy that section. (neither supermarket nor costco would just sell that.
