This is driving me nuts, I can't eat or appreciate many of the different kinds of sushi that have any nori in them. No rolls, not nothing. It's a texture thing for me. No nori = melt in your mouth goodness. With nori = tangled mess in your mouth that seems like you're chewing forever.

What am I missing? It tastes like fermented extremely tough straw to me.

You are doing it wrong.

Fresh roasted Nori sheets are crisp; particularly when they are used for fried roles.

But this turns into disgusting leather in about 1/2 an hour of exposure to the air, or when it comes in contact with improperly cooked rice.

The solution is to make it yourself, make the rice right and only buy the less-economical 10-pack sheets and dispose of any sheets not used for that meal. This is what I'm doing for my salmon-skin hand roles tonight.

it's hard to eat uni or masago Nigiri w/out using nori.

I love fresh Uni.
